THE ROLEAs a Head Chef, you assist with providing an excellent customer experience in our military messes, golf and curling operations and marinas.
As an Head Chef you will plan, organize, and supervise the kitchen operations in the mess. You will enforce the health, hygiene, safety, and security standards and programs. You will ensure quality products and services are being provided while maintaining portion sizes and presentation standards. You will determine and arrange member’s food requirements for functions. You will order food and kitchen supplies. You will monitor and control the storage of the quantity, price, and kitchen inventory in the information software. You will monitor and control the use of kitchen equipment.
QUALIFICATIONS NEEDEDEducation, Certifications and Licenses
High school diploma AND some years experience in the food service sector, or in a related hospitality field, including supervisory experience
AND
A current Inter-provincial Chef’s certificate
Food Handling Certification (An asset)
Experience
In planning and supervising food preparation and delivery
In menu planning
In inventory and cost management
In preparing work schedules
In applying policies, procedures, and relevant legislation
In using software for word processing, spreadsheets, presentations, databases, e-mail and Internet browsing
Competencies

CAF Messes: Offer expertise in management, operational and hospitality services as part of the team that oversees military messes throughout Canada and the world. The military mess is the centre of social life for serving members of the Canadian Armed Forces, where customs, responsibilities and social standards are practiced. Messes are steeped in rich military heritage and tradition. The mess includes food as a central component of events and camaraderie. Personnel Support Program (PSP) Hospitality Services and management are pinnacle to their success.
